Domaine Chevrot is run by Pablo and Vincent, who have made a name for themselves among the Maranges Bourgogne appellation. Part of a new, progressive generation of winemakers, they are ones to watch!

A family business created in 1930 by grandparents Paul and Henriette, passed onto father Fernand and his wife Catherine.
Pablo then joined the domaine in 2002, with Vincent joining in 2007.

The domaine includes 20 hectares of vines, Pinot Noir, Aligoté and Chardonnay and produces 15 different AOC mainly in Maranges and Santenay, all organically farmed since 2007. The terroir, primarily clay-limestone, originates from outcroppings dating back to the Upper Triassic (-230 to -195 million years) and Lower Jurassic (-195 to -175 million years).

Pablo and Vincent adopt a comprehensive approach to winemaking, prioritizing the entire lifecycle of the vineyard and the overall biodiversity of the soil and surroundings (even obtaining organic certified bricks for their new winery walls!). Their philosophy is reflected in every facet of their work. As a testament to this, they introduced horse ploughing in 2003, a practice that resonates with their viticultural values. Presently, 5 hectares of their vineyard are tended this way, with plans to expand this area twofold in the coming five years.

The domaine main house revolves around a 200-year-old structure, housing remarkable vaulted cellars since 1798, where oak-barrel-aged wines mature (with 20% renewed annually). Additional temperature-regulated spaces have been added for vat and bottle storage.

In the cellar, their reds are made with zero sulfur and the whites are under 15ml/Litre, essentially none, making the terroir expression of their wines shine through. The brothers are looking for maturity in the grapes, for generous and gourmand wines with low intervention overall.

Pablo, a well-regarded figure in the world of wine, also holds the position of Vice-President at the renowned Les Aligoteurs association. Our partnership began with their fantastic Bourgogne Aligoté offerings. Among these, a standout is the impressive single vineyard Tilleul, aged in classic foudres. This cuvée sparked our journey of appreciation for Aligoté.

CRÉMANT DE BOURGOGNE
LES BULLES DE PAUL (2021)

Style: Sparkling
Variety: 100% Pinot Noir
Abv: 13%
Region: Côte de Beaune

Terroir: The grapes come from one single vineyard located around the village of Cheilly-lès-Maranges in Côte de Beaune. The main vineyard is cultivated on grey marl facing west.

Winemaking: Hand-picked, the grapes were gently pressed for 3 to 4 hours and went through fermentation in vats. The wine lived on its lees for 9 months before starting the Traditional Method sparkling wine process with no chaptalisation or acidification.
After the second fermentation, the wine stayed on its lees in the bottle for another 21 months, making the total time of lees contact of over two and half years.

Tasting notes: Aromas of marzipan, green gage, tonka bean, and hints of tarragon, green apple, and grapefruit. The blend of grapes brings the perfect balance between crispiness and roundness.
As for the previous vintage, the mouth feel is refreshing and classy, the flavours on the nose come through the palate beautifully.
Les Bulles de Paul is perfect as an apéritif, as well as a partner for Japanese food even sushi as well as almond tart or macarons.

Potential ageing - 5 years. Serve around 10°C

CUVÉE DES QUATRE TERROIRS (2021)

Style: White
Variety: 100% Aligoté

Terroir: The grapes come from four different single small vineyards. (1.4 Hectares in total) which are located around the village of Cheilly-les-Maranges. They all have Aligoté friendly soil characteristics of carbonate sands, sandstone and limestone. Vine age of 45 years old.

Winemaking: Maturation : 10 months in old French oak

Tasting notes: The aroma expressions are both floral and fruity. The subtle sweet, floral, rose/minty delicate hints on the nose which remind us of a British garden. The candied citrus fruits on the palate are light and pure, with a crystalline and hazelnut saline touch. The acidity is well-balanced by the nutty, slightly oily, comfort mouth feeling which, after a long-finish, makes you want more! This wine can be aged for an average of 2 years and is best tasted between 9°C and 11°C.

Perfect as an apéritif, or as an accompaniment to a cheese board, dressed vegetables, or Asian food. It is also seafood’s best friend!

TILLEUL (2020)

Style: White
Variety: 100% Aligoté

Terroir: The "Tilleul" vineyard, named after its proximity to the Domaine winery, covers 0.37 hectares in Cheilly-lès-Maranges at around 240 meters altitude. Its diverse terroir, ranging from Triassic sandstone (250 million years old) to a thin layer of pebble clay from the Cozanne valley (1.75 million years old), creates an optimal environment for Aligoté. The vineyard is tended by horses Valentine and Corléone, following organic and biodynamic practices that prioritize soil health. The vineyard features 100% Aligoté grapes, covering 0.37 hectares with an average vine age of 56 years.


Winemaking: Harvested grapes undergo gentle crushing, followed by extended pressing to extract superior juices. Minimal sulphur dioxide use (around 2 g/hl) is maintained. After settling, indigenous yeasts initiate fermentation. Fermentation in oak barrels lasts approximately a month at 15-23°C. Malolactic fermentation follows. Ageing spans 15 months: 12 months in 350-litre French oak barrels (no new barrels for Tilleul cuvée) and 3 months in stainless steel tanks.

Tasting notes: The bouquet is delicate yet powerful - Crafted traditionally, Aligoté Tilleul is primed for aging. Aromas of pear, quince, and spices like oregano, peppermint, and lime fill the nose. On the palate, mineral notes within a strong yet elegant structure lead to a lingering, saline finish with enduring spice and saffron accents.

Tilleul will pair fantastically with scallops or lobsters. For those who prefer meat, a roast quail with porcini mushrooms stir-fried with olive oil will be perfect too.

HAUTES-CÔTES DE BEAUNE CHARDONNAY (2020)

Terroir: Grapes are sourced from four distinct vineyards spanning 0.96 hectares, showcasing diverse sand, clay, and gravel terroirs. Notably, sites like Les Champs Riget boast carbonated blonde sandstone, while Au burot features dolomite and variegated clays. Vine age averages 33 years, and their elevation mirrors Maranges' 1er Crus, a rarity in Hautes Cotes Appellation, providing ideal conditions for producing top-tier wines.

Winemaking: Morning-harvested grapes undergo gentle crushing, extended pressing, and meticulous juice selection. Minimal sulphur dioxide is used (around 1 g/hl). The must settles overnight and ferments naturally with indigenous yeasts. Fermentation occurs in stainless steel tanks for about 3 weeks at 15-23°C. Maturation spans 18 months: 1st year in wood (1/4 in large oak casks, 3/4 in barrels, including 5% new), followed by 6 months in stainless steel tanks. Yield: 62.5 hL/ha - Production Volume: 8000.

Tasting notes: This Hautes Côtes de Beaune displays a complex bouquet with dominant fruitiness of pear, lemon, and fresh almond. Aeration introduces peppermint and fennel spiciness. The palate's refreshing, saline qualities merge with floral elderflower scents and smoky flint-like notes. The wine delivers exceptional value for its quality.

Aging Potential: 2 to 3 years / Serve at 14°C to 16°C.

BOURGOGNE, HAUTES-CÔTES DE BEAUNE (2020)

Variety: 100% Pinot Noir

Terroir: The grapes originate from four distinct vineyards spanning 2.50 hectares within Cheilly-Les-Maranges, situated on Triassic formations and the Cozane and Dheune valleys' gravels. Noteworthy terroirs include Carbonated blonde sandstone, Dolomite and variegated clays, and Calcareous gravels. The 50-year-old vines flourish in clay-gravel and marl terroirs, benefiting from an optimal maturation dynamic within Hautes Côtes de Beaune.

Winemaking: Harvested grapes are sorted to retain healthy clusters, transferred via gravity to minimize berry damage, and then destemmed. Vinification occurs sulfite-free, with vigilant monitoring of fermentation by indigenous yeasts for harmony. Gentle extraction during a 15-day maceration period is followed by 11 months of maturation in oak barrels sourced from central France, excluding new barrels.

Tasting notes: The 2019 Hautes Côtes de Beaune offers remarkable value, rivaling village appellations in structure and aroma complexity akin to premier Pinot Noir. A blend of black fruits and elegant spices defines its bouquet. Vibrant, structured, and showcasing exceptional flavors with refined tannins, it avoids rusticity found in other Hautes Côtes de Beaune wines. Generous, with a sophisticated saline finish and smooth tannins.

Potential Aging: 3 years Serving Temperature: 16°C to 18°C
