The main vineyard is cultivated on grey marl facing west. Winemaking: Hand-picked, the grapes were gently pressed for 3 to 4 hours and went through fermentation in vats. The wine lived on its lees for 9 months before starting the Traditional Method sparkling wine process with no chaptalisation or acidification. After the second fermentation, the wine stayed on its lees in the bottle for another 21 months, making the total time of lees contact of over two and half years. Tasting notes: Aromas of marzipan, green gage, tonka bean, and hints of tarragon, green apple, and grapefruit. The blend of grapes brings the perfect balance between crispiness and roundness. As for the previous vintage, the mouth feel is refreshing and classy, the flavours on the nose come through the palate beautifully. Les Bulles de Paul is perfect as an apéritif, as well as a partner for Japanese food even sushi as well as almond tart or macarons. Potential ageing - 5 years. Serve around 10°C</image:caption>

(1.4 Hectares in total) which are located around the village of Cheilly-les-Maranges. They all have Aligoté friendly soil characteristics of carbonate sands, sandstone and limestone. Vine age of 45 years old. Winemaking: Maturation : 10 months in old French oak Tasting notes: The aroma expressions are both floral and fruity. The subtle sweet, floral, rose/minty delicate hints on the nose which remind us of a British garden. The candied citrus fruits on the palate are light and pure, with a crystalline and hazelnut saline touch. The acidity is well-balanced by the nutty, slightly oily, comfort mouth feeling which, after a long-finish, makes you want more! Its diverse terroir, ranging from Triassic sandstone (250 million years old) to a thin layer of pebble clay from the Cozanne valley (1.75 million years old), creates an optimal environment for Aligoté. The vineyard is tended by horses Valentine and Corléone, following organic and biodynamic practices that prioritize soil health. The vineyard features 100% Aligoté grapes, covering 0.37 hectares with an average vine age of 56 years. Winemaking: Harvested grapes undergo gentle crushing, followed by extended pressing to extract superior juices. Minimal sulphur dioxide use (around 2 g/hl) is maintained. After settling, indigenous yeasts initiate fermentation. Fermentation in oak barrels lasts approximately a month at 15-23°C. Malolactic fermentation follows.       <image:caption>PETIT CHABLIS SUR LES CLOS (2022) Style: White Variety: 100% Chardonnay Abv: 13% Region: Chablis Terroir: Petit Chablis, Sur Les Clos is a very special vineyard is located on a plateau just above the Chablis Grand Cru, Les Clos. Its exceptional Kimmeridgian terroir sits atop a Jurassic bedrock formed around 155 million years ago. The soil is rich in clusters of small oyster fossils called Exogyra Virgula. The vines have been organically farmed since 2009. Double guyot pruning. Surface area of the vineyard: 0,60 ha; Age of vines: 30 years old. Winemaking: The grapes were handpicked when fully ripe and gently pressed. The static settling took place for around 15 hours, before preparing for the low-intervention indigenous yeast fermentation process. The fermentation is allowed to happen without additives in stainless steel tanks (50%) and in 400 litre barrels (50%) and will mature for 8 months. The impact of the oak is subtle and very well-integrated. Before bottling after a final 4-months rest in stainless steel vats, Dominique chose to do a very light filtration to preserve the fruit purity and the expression of the wine. SO2 total: 47mg/l Tasting notes: On the palate, delicate candied citrussy aromas with hints of mint and verbena - all lifted by an impressive vibrant saline minerality. Its freshness will harmonize perfectly with seafood, crustaceans, and goat’s cheese. Also perfect as an aperitif with prawns and salmon canapés. A “Petit Chablis” with a strong personality, a great length, and a long salivating finish.</image:caption>

      <image:caption>BOURGOGNE ÉPINEUIL (2021) Style: Red Variety: 100% Pinot Noir Abv: 13.5% Region: Grand Auxerrois Terroir: In some part of the Chablis and Auxerrois northern Burgundy regions, there are small Bourgogne Appellations which are still largely under the radar, places like Épineuil. Here, we can find the Pinot Noir from the North, not far from the border of Champagne. Dominique’s Bourgogne Épineuil comes from vineyards cultivated on Kimmeridgian limestone-clay soil dating from the Jurassic period 155 million years ago. A soil full of oyster fossils! Winemaking: The vines are around 37 years old and are spread among 8 hectares from 10 different plots facing southeast and southwest. Organically farmed, the grapes were both hand and mechanically picked with an exceptional yield of 54hl/ha. Dominique’s Bourgogne Épineuil 2021 is 80% destemmed before the fermentation process. The 20% whole bunches add another layer of fruit concentration and structure to the wine. Aged for 10 months in 228L old French oak barrels in a beautiful 800-year-old cellar. Tasting notes: Pale, shiny garnet-ruby colour, in the glass. The aromas on the nose are expressive and straight forward: red and black fruits, violet flowers punctuated with mild sweet spices. The texture is smooth with soft velvety tannins. It is best enjoyed with a slow cooked lamb shoulder roast, pork, duck breast fillet, some fish dishes, and suits the sweet and sour of mild spiced dishes such as tagines and curries. A velvety, charming Pinot Noir with ageing potential of around 7 years.</image:caption>

The vines face south west which allows for good sun exposure to ensure a full ripeness. Winemaking: The grapes were carefully hand-picked for a 100% whole bunch fermentation process without the use of any sulfites, enzymes or added yeast. The grapes ferment in stainless steel vats and stay for approximately 3 weeks with daily pumping over, pushing down and sometimes delestages. Aged for 15 months in 228L French oak barrels (including 30% new oak) in the beautiful 800 year old cellar. Tasting notes: In the glass, the wine is a bright ruby red colour. The nose is elegant with aromas of red fruits, cherry tarts, thyme, blood orange and white pepper. Very mineral. The palate is lean with racy acidity and fine, velvety tannins. A full mouth feel for a long finish. Will pair with meat dishes, Asian cuisine and also cheeses, charcuterie, and chocolate puddings. A slightly aged Pinot Noir from Burgundy. Complexity of aromas and taste are key here. Can also be kept in the cellar until 2028.</image:caption>

Pounjut means pointy in the Occitan language - The berries are “pounjut”, pointy, like an olive shape. Marc is its only producer. Thibaut describes it as “The Poulsard of the South”. The wine is only 10.5% alcohol! Located on the highest terrace of the river Tarn (altitude 220m), the terroir corresponds to ancient, highly eroded alluvial deposits resting on the limestone and clay substrate of the southwest basin. Depending on the altitude or slope, the layer of alluvium (pebbles, sands, silts) varies in thickness. Negret Pounjut is planted in a plot rich in pebbles, on siderolitic clays. The fruits come from 2 different plots (0.8 ha total). The vines are planted at 5000 vines/ha, and the yield for 2022 is averaging 45 hl/ha.       <image:caption>TURBULLENT (NV) Style: Sparkling Rosé Variety: 100% Gamay St Romain Abv: 10% Region: Côte Roannaise, Haute Loire Terroir: Winemaking: The grapes are hand-picked and directly gently pressed in the winery, keeping the maceration light to minimize the extraction of both colour and tannin. The wine is then made by the Ancestral Method which consists of bottling before the fermentation completes. It follows that the carbon dioxide is produced by the grapes’ natural sugars. The wine is disgorged and the wine level topped up. The amazing natural acidity of the wine keeps the perception of sugar very low. There is 12mg of residual sugar, but we wouldn’t believe it if we weren’t told. Tasting notes: We have pear and raspberry notes both on the palate and the nose. It is alive, fun and unique - this would be the perfect sparkling rosé wine for an apéritif, with pudding such as panna cotta, Eton Mess, cheesecake, strawberry tart, an afternoon refreshment, it could be used to make cocktails, or served at a brunch as well at a wedding lunch. This sparkling wine is beautifully light, crisp, refreshing, finely bubbly, and low alcohol. Best enjoyed at around 8°C .</image:caption>

(2022) Style: Red Variety: 100% Gamay St Romain Abv: 12.5% Region: Côte Roannaise, Haute Loire After working with Stephane's wines for two years, I've developed an affinity for this underappreciated grape variety, akin to Aligoté, which deserves recognition among Gamay wines. Stephane has adeptly harnessed the nuances and incredible flavors of this grape, highlighting its terroir while maintaining freshness and a complex, aromatic, mineral quality. Terroir: The vineyards are planted at high density on volcanic terroir (granite). The grapes are from two parcels of young vines (2.5 hectares total, aged 6 to 9 years) at 480 meters altitude around the estate. Winemaking:   Hand picked. Carbonic maceration in a 510-hectolitre concrete tank for 11 days, followed by gentle, extended pressing to extract delicate aromas and textures. Maturation lasted 6 months prior to bottling, with no added sulfite and no filtration. Organic and Biodynamic certified. Yield of 45 hectoliters. The debut vintage of Gamette, 2022, saw warmth tempered by mid-August rain, allowing grapes to mature without overripening. Tasting notes: Notes of red currant, cherry and cassis, supple tannins makes this a fresh and vibrant addition to the collection of cuvées made exclusively for Déjà Bu wines. Gamay St Romain's unique attribute of smaller berries led to intensified color, spice, and peppery aromas. At Stephane Serol's domaine, Gamays are known for their freshness and minerality—traits I aimed to capture in Gamette.</image:caption>

Anchored by a base of rare Blue Schist, a gem seldom found in Alsace, this terroir crafts wines of remarkable density, unwavering precision, and inherent structure—a vinous embodiment of marathon-like endurance coupled with the graceful poise of a ballerina. Winemaking: Following a 48-hour maceration period prior to pressing, the wine undergoes vinification and matures for an impressive 18 months, cradled on its lees within barrels aged 5-6 vintages old. All wines originate from vines cultivated through organic or biodynamic practices and are hand-harvested. Approximately half of the blend is composed of Gewurztraminer, complemented by a significant portion of Sylvaner and a subtle touch of Muscat. The key lies in relatively short maceration periods, averaging around ten days, with minimal extraction, cooled by a small portion of direct-pressed must to soften the tannins and bitter notes. Version 3 of this creation is an amalgamation of the 2021 and 2022 vintages. Serving as the flagship cuvée of Soil Therapy, this edition saw the production of 3500 bottles in 2021. The local plants and animals benefit from a mild microclimate and are protected. The soil, which goes down a meter, gives the wine a salty feel and a rich texture. Winemaking: The Pinot Blanc and Pinot Gris grapes are both grown in the same 40-year-old biodynamically cultivated plot covering 0.5 hectares. They are harvested together and then spend a few days in contact with the grape skins before being gently pressed and aged in old French barrels (228L and 400L), like Thomas's other wines. Tasting notes: The aroma and taste go hand in hand - the mineral aspects from the granite come through on the palate, resulting in a smooth and honeyed finish of exceptional quality. Only 1700 bottles were produced in 2021. It's good to drink now and can be enjoyed until 2043.</image:caption>

(2022) Style: White Variety: 100% Aligoté Abv: 12% Region: Côte de Nuits Terroir: The grapes are sourced from all across Burgundy - 27 sources across the wine region, making Aligotte 2022 a good representation of the vintage. We have a very interesting blend of terroirs and geological characteristics that beautifully suit the Aligoté grape variety. Winemaking: After pressing the grapes on the same morning they were handpicked, the fermentation and 10 months of aging took place in 40 and 80 hectolitres old oak foudres - The foudres let the wine mature at its own pace and it evolves, breathes, shapes its personality slowly and precisely. Tasting notes: A bouquet of stone fruits, citrus complemented by white flower. Orchard pear, candied orange zest both on the nose and palate - the aromas are coming through along with subtle sweet spices and herbs such as thyme. The finish is superb with a long mouth-watering salinity - powerful flinty minerality! Sharp and crisp. Aligotte! 2022 will complement perfectly oysters, dauphinoise potatoes, creamy stews, and strong or milder cheeses. The viticulture is organic and biodynamic, working with a mix of sandy, clay and limestone soils. Winemaking: The juice was whole-bunch fermented (80%) and vinified without sulphur. Maceration was in the gentle infusion style without too much extraction. Just 32mg of total SO2 (6mg of free SO2) at racking and bottling (vs the upper limit of 150mg) stabilise the wine while preserving the vibrant freshness of fruit. Maturation took place for a year in a mix of 228 and 350L old French oak, with a final year in stainless steel to relax and settle. Tasting notes: With its youthful purplish hues, the wine looks almost Gamay-esque and that carries through in the generous fruit on the nose and palate. Ripe, dark fruits, rich cherry and blackcurrants burst over our tongues. There are hints of kirsch, delicate spice and pepper on the palate, developing into cool smoke, tobacco and leather on the finish. A touch of wild countryside and fresh earth in the aroma speak confidently of the wine's terroir and artisanal origins. The tannins are fine and friendly - very delicate on the palate - and the finish long and pleasurable. A vibrant expression of Pinot Noir from a vanguard of Burgundy’s natural wine movement.</image:caption>

Soil predominantly clay with flint, some with red clays on limestone subsoil.  Vines on south/southeast facing slopes, lower and mid-slope. Yield of 45 hectoliters per hectare, 10,000 bottles in 2022, with an average vine age of 30 years.  Winemaking: Long and gentle pressing of whole clusters using a pneumatic press. No sulfiting in 2022 on must. Light settling in tank then barrel aging with choice of wood (3/4 oak and 1/4 acacia), barrel age (1 to 8 wines), and barrel volume (228, 400, and 500 L), separating different pressings and parcel selection. Vines on plateaux in Marçon and Chahaignes. Vines averaging 40 years old. Average yield: 35 hl/ha. Winemaking: Relatively short maceration, indigenous yeast, semi-carbonic fermentation of whole clusters and destemmed grapes using the 'millefeuille' principle. Proportions vary according to the vintage and maturity. Completion of alcoholic and malolactic fermentation in barrels of 3 to 5 wines. Aging for 8 months. Bottled without filtration with light sulphuring. Tasting notes: With a texture reminiscent of Beaujolais or Pinot Noir, this charming red, primarily made from Pineau d’Aunis, also offers earthy, herbal, and peppery notes. The vines grow in clay-rich, flinty soils with a limestone base, lending a refreshing quality to the cuvee l’Aube. Both plots face East/West, maximizing daily sunlight. In 2022, the yield was 35 hectolitres per hectare, following biodynamic principles with complete ground cover and treatments 500P and 501. This vintage produced 5000 bottles. Winemaking: After gentle hand-picking in small crates, grapes undergo a three-hour pressing in a pneumatic press. Aging occurs, with two-thirds in stainless steel and fibber tanks and one-third in sandstone amphorae, adding depth and texture. Chardonnay and Chenin ferment separately before harmonizing during approximately 8 months of lees aging. The total SO2 content is a modest 35mg/l, with minimal filtration. Here, the soil composition consists of clay infused with flint, overlaying a sandy-clay texture at the surface. The vines planted in 1990 are trained with the Guyot single pruning method. Winemaking: Hand-picked. grapes undergo direct pneumatic pressing. Fermentation occurs with indigenous yeasts, 50% in stainless steel tanks and 50% in French oak barrels of 225 and 400 litres, aged between 6 to 10 years.  12 months aging. Two months prior to bottling, the wine is assembled and gently filtered using Kieselguhr (sedimentary rock that is composed of the fossilized remains of diatoms, which are a type of hard-shelled algae). Tasting notes: A nose revealing aromas of white fruits, pear, and peach. The palate is round, with a generous volume that balances well, while delicate hints of bitterness enhance and add even more length to this divine bottle. A beautiful Chardonnay from Touraine! Pairing with scallop terrine, rillons (pork belly confit), country-style terrine, fish en papillote, white meat in citrus sauce, washed rind cheese, Pont-l'Évêque, Munster. Most of these vineyards face East/West, maximizing sunlight exposure. As with all the vineyards on the estate, viticulture here follows the principles of biodynamics, with complete ground cover in the vineyards. In 2022, yields were around 40 hectoliters per hectare, resulting in a total production of 7500 bottles for the year. Winemaking: Following manual harvesting in small crates, the grapes are gently pressed for a lengthy three-hour cycle in a pneumatic press. Fermentation and aging occur in stainless steel and fiber tanks to preserve the expression of fresh and vibrant fruit. Total sulfur content stands at 35mg/l, and there is a light earth-based filtration before bottling. It was the wine of choice for the nobility! Terroir: 100% Cot cuvée comes from similar in terroir and exposure to Mon Mojo, hails from 60-year-old vines rooted in Montlouis' clayey flint soils, facing East/West. Yields are moderate at around 40 hectoliters per hectare. The grapes harvested are robust, and we aim to concentrate the juice without dilution, much like the viticulturists of that time. Winemaking: In the cellar, the grapes are 100% destemmed, and maceration lasts for approximately three weeks with 2 to 3 pump-overs per week. Our goal is to achieve suppleness in the wine without extracting excessive tannic structure. Aging takes place for about 8 months in tanks to preserve a luscious fruit character. There's a gentle filtration and sulfiting before bottling, resulting in a total of 20mg/l of SO2. Tasting notes: An exceptional expression of Côt, offering a blend of ripe black and red fruits with subtle spice and pepper notes.
